Spread cheese over the bottom of a greased 9 x 13 inch pan. Drizzle with butter. In 1-quart Pyrex measurer, whip together half and half, salt, pepper, and mustard. Pour half of mixture over cheese. Layer eggs over next. Pour rest of milk mixture on top. Sprinkle with parsley. Bake at 350 degrees for 45 minutes (or convect for 40 minutes). Remove from oven. Let rest for five minutes before cutting into servings. Serve with your favorite salsa and/or Ruth's Famous Bell Pepper Sauce.
